There is a bit of a waffle craze sweeping through the keto community. I could only be left out of it for so long (mega waffle fomo). A few days ago I surrendered and bought myself a little mini waffle maker. It took a few tries but I finally got a really good keto waffle recipe ironed out. Here she is!
Blend all ingredients together by hand, in a blender, or in a food processor. For the mini waffle maker I found that a 1/4 c. measuring cup to be the perfect amount of batter for one waffle. I cooked each waffle for one minute and 30 seconds. This recipe makes 5 waffles on a mini waffle iron.
This recipe can be doubled to make 10, eggo sized, mini waffles.

Carbohydrates: 2.4 g (- .9 g. fiber) = 1.5 g net carbs

Storage tips! I store these waffles in a ziplock bag in the fridge. I am experimenting with freezing these waffles. Will report back!
