cinnamon almond butter bread

A super simple, quick bread that makes an extraordinary butter delivery device when toasted. Just a suggestion.

1 cup almond butter

6 eggs

1 tsp. vanilla

1 tsp. cinnamon

1-2 tbs. sweetener of your choice

1 tsp. baking powder 

Combine all ingredients in a mixing bowl with a hand mixer on low speed until well incorporated. This usually takes me less than a minute. Pour batter into a parchment lined or nonstick loaf pan. Bake at 350 for 25-30 minutes until set. I tap on the top to check for doneness :) Store covered or in a big ziplock in the fridge for up to a week.


Storage tips! Store your bread in a ziplock bag or any airtight container in the fridge. This bread, and lots of Keto baked goods, tend to dry out quickly. If you want to freeze this loaf I would suggest slicing it up and then placing a piece of parchment or wax paper between slices. This makes for easy removal if you just wanted to warm up a slice or two.
